Near JR Ashiya Station, on the 1st floor of “Alpa Ashiya” along Ekimae-dori Street, “hacci hacci,” a restaurant serving dishes made with handmade koji, is apparently opening on Thursday, August 8〜
(Thanks to Aoharu-san for the tip!)

↑A notice was posted on the shutter at the planned opening site. They apparently make koji by hand using traditional methods, with rice grown through natural farming.
Inside the shop, you’ll be able to enjoy deli items and lunch made with koji, as well as fermented foods like dips and amazake. They’ll also be able to blend freshly made raw koji into shio-koji or ama-koji for you〜

↑The exterior of the planned opening site. This is where the salad specialty shop “自家農園のあるサラダ屋さん ta” used to be〜
Here’s the map↓
The address is 1-20 Matsunouchicho, Ashiya City, Hyogo Prefecture.

Final Thoughts
A koji specialty shop is opening on the former site of a salad specialty shop! This spot seems to keep attracting shops with a healthy image〜. In Ashiya City, a koji sweets cafe called “麹菓堂 wabi” also opened in Chayanomachi this February〜
Aoharu-san, thank you very much for the tip!!
