I had soba for lunch at “Ashiya Dosanjin,” a stone-milled handmade soba specialty restaurant along Sakura-dori Street in Kawanishi-cho.

The kakiage is “small shrimp and squid kakiage.”

I had always thought of sudachi soba as a cold soba dish, but they have a hot version too!
The sliced sudachi are arranged so beautifully. It looks great in photos!

The aroma, tartness, and subtle bitterness of the sudachi mix with the dashi and coat the soba!
And that warm sudachi-flavored dashi… I could keep drinking it forever!

The kakiage has plump shrimp and squid, with a perfectly crispy coating!
You’ll find yourself going back and forth between the rich kakiage and the refreshing dashi, and you won’t want to stop!
