We picked up some yose tofu and atsuage from the tofu shop “とうふ工房はな”, which opened on December 8 in Shimizu-cho along National Route 2.
“とうふ工房はな”’s “Hana Yose” and “Atsuage”

↑ There were four kinds of tofu, and we went with the popular yose tofu, “Hana Yose”!

↑ This tofu has a refined, clean Kyoto-style flavor, while still letting you really taste the soybeans.

↑ They also sold three kinds of salt you can sprinkle on the tofu to change up the flavor. The pink sakura salt apparently contains cherry leaves and pigment from red daikon.

↑ It adds a gentle sakura flavor and looks beautiful too!

↑ This is atsuage fried in the workshop attached to the shop! Depending on the timing, you may be able to buy it freshly fried.

↑ We lightly grilled it and topped it with bonito flakes and soy sauce.

↑ There’s nothing better than biting into hot, crispy, juicy atsuage!

↑ This tofu shop opened near Shimizu Park along National Route 2.

↑ They had four kinds of tofu: silken, firm, yose tofu, and yuba tofu. They were also selling items like unohana, okara croquettes, soy milk, chawanmushi, and lemon cake made with okara.

↑ In addition to sakura salt, they also had seaweed salt and calcium-rich hana salt.
