We tried the chilled Okinawa soba at Okinawa soba specialty shop “芦屋製麺所 がんじゅ〜,” which opened on July 15 along Ekimae-dori near JR Ashiya Station!

The chilled Okinawa soba is served tsukesoba-style, with thoroughly chilled noodles and cold dipping broth served separately.
The noodles are fresh, house-made noodles prepared and cut right in the restaurant, giving them a satisfyingly firm and silky-smooth texture.
The dipping broth is a light, refreshing dashi flavored with bonito, kombu, and soki (pork). It goes down effortlessly, even when the summer heat has sapped your appetite!
The separately served “Nankotsu Soki” topping comes in a very generous portion!
The slow-simmered pork cartilage is tender all the way through—soft and melt-in-your-mouth delicious!
“Sardine Beccafico (two pieces)” ¥500 (tax included)
The side dish “Sardine Beccafico” is a Sicilian Italian specialty featuring a fragrant, savory coating of herbed breadcrumbs. The little rolled-up shapes look adorable too!
There is also a great selection of rice-based side dishes, including onigiri and jūshī (Okinawan-style seasoned rice).
Another nice touch is the free, unlimited self-service sanpin tea (jasmine tea) available inside the restaurant!

The restaurant operates in two sessions—morning and lunchtime—with slightly different menus for each. Alcohol is also available, so it could be a good spot for a lunchtime drink!
